- comments: observed no handwashing soap at the only handwashing sink in the prep/dishwashing area. Dishwashing detergent was provided due to no handwashing soap being on site at the time of the inspection. Priority foundation 7-38-030(c), citation issued

16. Food-contact surfaces: cleaned & sanitized
- comments: observed pink and black mold-like substance above the ice, on the interior of the ice machine. Instructed to clean, sanitize and maintain. Ice machine is used for human consumption. Priority foundation violation 7-38-005, citation issued

22. Proper cold holding temperatures
- comments: observed improper cold holding temperature of slabs of pork (58. 0f) inside of a two door refrigerator. Manager discarded approximately 20lbs at $200 worth of product. Must have cold holding foods at 41. 0f or below. Priority 7-38-005, citation issued

36. Thermometers provided & accurate
- comments: observed no probe stem thermometer for taking food temperatures on site. Must provide. Priority foundation, 7-38-005, citation issued

37. Food properly labeled; original container
- comments: observed containers of dry ingredients and a squirt bottle not labeled. Instructed to label and maintain.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed balls of plastic being used as sink stoppers for the warewashing sink. Instructed to provide adequate sink stoppers and maintain.

53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: observed no lided receptacles in the women toilet room. Instructed to provide and maintain for disposal of feminine products.

55. Physical facilities installed, maintained & clean
- comments: observed the walls/crevices between pipes in need of cleaning under the three compartment sink.

57. All food employees have food handler training
- comments: observed no food handler certificates on site at this time. Instructed all food handlers must take course and maintain records on site.

58. Allergen training as required
- comments: observed no allergen training certificates for certified food managers on site. Instructed all certified food managers must take allergen course and maintain records on site at all times.
