10. Adequate handwashing sinks properly supplied and accessible
- comments: observed a bucket and wiping cloths stored inside the handwashing sink located at front prep area. Corrected on site. Bucket and wiping cloths removed. Instructed manager to maintain accessibility of handwashing sinks at all times. Priority foundation violation 7-38-030(c),citation issued.

16. Food-contact surfaces: cleaned & sanitized
- comments: observed (black) slimy substances on interior water components of the ice maker,dripping into ice 'ice is used for human consumption'. Instructed management to turn-off ice maker,remove ice and have interior of ice machine cleaned and sanitized in detail and maintain. Priority foundation violation 7-38-005,citation issued.

- comments: observed large round white container of sugar in dishwashing area and seasonings in small containers in front prep area not in original containers. Instructed to label storage containers with common name of food.

- comments: observed wiping cloths on cutting board counter in front prep area. Instructed manager that when not in use wiping cloths must be stored in sanitizer solution between uses.

- comments: observed disposable small black souffle cup used to dispense toppings in front prep area. Instructed to use proper utensil with handle for dispensing toppings.

- comments: observed foil used as shelf liner throughout front prep area. Instructed to remove foil and maintain shelving in good condition. Observed stained cutting boards in front prep area. Instructed person in charge to deep clean or replace and maintain.

Instructed management to provide and maintain hot running water above 110f at the 3 compartment sink and above 100f at all hand washing sinks. Water temperature ranging from 75f-82f. Instructed to install a larger or additional water heater. Shall be sufficient to meet the peak hot water demands throughout the retail food establishment. Priority violation 7-38-030(c), citation issued.

- comments: observed leak from water supply line of one compartment sink in front prep area. Instructed to repair and maintain in good condition.
