- comments: found no employee health policy on site. Instructed managers to provide a verifiable acknowledgement of their responsibility to report information about their health and activities to diseases that are transmissible through food to the pic. 29. Compliance with variance/specialized process/haccp
- comments: found kimchi and in-house pickles made on-site. A retail food establishment shall obtain an approved haccp and variance from cdph before fermenting food. Kimchi and pickles were tagged and held for inspection by the chicago department of public health. Instructed operator to no longer sell or serve said food item until haccp and a variance are approved by cdph. Priority foundation violation. 7-38-005. Citation issued.

- comments: found three high-temperature dish machines on site. Found no irreversible registering temperature indicator on site. In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature.
