- comments: instructed to provide handwashing signage at all handsinks (washrooms).
16. Food-contact surfaces: cleaned & sanitized
- comments: observed the kitchen low temperature dish washing machine at improper final sanitizing rinse at 0 ppm chlorine concentration. (dishmachine is in use at this time). Instructed manager to repair and maintain. A mechanical dishwashing machines should provide a final sanitizing rinse of either 50 � 100 ppm chlorine (for chemical sanitizing machine) or 180f final rinse (for hot water sanitizing machine). Dishmachine tagged 'held for inspection'. Instructed not to use until repaired (see comments below). Priority violation 7-38-025,citation issued (cos).
38. Insects, rodents, & animals not present
- comments: observed evidence of pest activity approximately 20 live ants crawling along floor and wall tiles underneath the kitchen/dishwashing 3-compartment sink area. Instructed to detail clean and remove all ant activity sanitize all affected areas. Also, additional pest control service is needed to eliminate the pest activity. Priority foundation violation 7-38-020(a), citation issued.

- comments: observed employee with no hair restraint in the food prep area. Instructed manager to provided hair restraints for all employees in the food prep area.

- comments: observed stained cutting boards on top of the kitchen prep line coolers. Instructed to resurface or replace the cutting boards.

- comments: instructed to detail clean and organize the rear ice maker/hot water tank location and remove unnecessary articles due to potential pest harborage and elevate mops,brooms cleaning equipments off the floor at least 6' inches to facilitate cleaning.
