- comments: interior of ice machine compartments not clean (interior top and bin). Ice is used for human consumption. Instructed to clean, sanitize and maintain unit. Ice machine is located in basement storage area

22. Proper cold holding temperatures
- comments: cooked tcs foods at stored inside the walk-in cooler improper temperature:three variety of chicken 44. 5f to 46f; two kind of cooked rice 45. 7f 46. 4f; a large pan of chile reyeno at temp of 44. 6f. Food was cooked on 11-5-2024. Cold food must maintaine temp of 41f and below. Food discarded and denatured:pounds 40 value 100. Priority violation:7-38-005,citation issued.

38. Insects, rodents, & animals not present
- comments: we observed over 80 mice droppings in prep,storage and selling area: under and on shelves(no gnawed food),along baseboard walls,under three compartment sink. Instructed to remove droppings,clean and sanitize mentioned area. Priority foundation violation:7-38-020(a). Citation issued.

41. Wiping cloths: properly used & stored
- comments: must store wiping cloths in prep areas in sanitizer bucket between uses to prevent cross contamination. Instructed to maintain.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: must not use milk crates as a means of elevation for stored items.

56. Adequate ventilation & lighting; designated areas used
- comments: protective light shield at produce cooler is missing end caps. Must provide
