- comments: noted no metal stem thermometer on site to monitor the internal food temperature of tcs food cooked, delivered, and served. Facility must obtain and maintain proper thermometers. Priority foundation violation #7-38-005. No citation issued

39. Contamination prevented during food preparation, storage & display
- comments: observed food containers stored on 2 inches in dry storage areas. Instructed manager to properly store and protect food items from contamination while stored by elevating at least six inches from the floor on raised shelving units.

- comments: observed food handlers prepping food without hair restraints. Instructed person in charge that all food handlers must wear a hair restraint.

- comments: observed facility without a chlorine chemical test kit for sanitizer or for ware washing area. I informed the person in charge that a test kit that accurately measures the concentration in mg/l of sanitizing solution must be provided. Priority foundation violation #7-38-005. Citation issued.

- comments: observed exposed brick walls in the prep area of the facility. Noted dry store room wall has a 2 foot cut all the way around instructed to cover as walls should be sealed,smooth and easily cleanable.

- comments: observed burned out light buld in dry storage area instrcuted to replace buld and maintain

58. Allergen training as required
- comments: observed the city of chicago food certified manager with no proof of allergen training certificate. Instructed all city of chicago certified food managers obtain this certificate.
