- comments: observed improper thawing being done on frozen portioned chicken. Thawing must occur with food being placed in a refrigeration unit, or under cold running water. Instructed to maintain correct thawing procedures. (cos).

- comments: observed employee with no hair restraint in the food prep area. Instructed manager to provided hair restraints for all employees in the food prep area.

- comments: instructed to replace water stained ceiling tile at rear food prep/dishwashing area and maintain.

- comments: instructed to detail clean kitchen exhaust hood/filters to remove accumulation of grease build-up and maintain.

- comments: previous core violation not corrected from inspection report#2544298 dated:11/17/2021 #58--observed no food allergen training certificates on site at time of inspection. Instructed all employees holding city of chicago foodservice manager certificates to complete allergen training and maintain records thereof on site at all times. Instructed to correct noted violation and maintain as required. Priority foundation violation 7-42-090,citation issued.
