- comments: observed cooked chicken held hot in a hot holding unit at improper hot holding temperatures of 116. 7f and 118. 7. Also noted mashed potatoes held at improper hot holding temperature in the front prep at 112. 6f. All discarded. Reviewed proper hot holding temperature requirements. Priority violation 7-38-005 citation issued.

- comments: noted raw chicken inside the cold holding bain marie prepping unit at improper cold holding temperature of 48f to 53. 2f on the top portion of the stored chicken. Chicken noted in a large container and piled high inside the pan. Chicken discarded and instructed to store in a shallow pan and monitor cold holding temperatures during preparation to maintain at 41f or below. Also noted tcs cheese and dairy based sauce held at improper cold holding temperature of 44f of cheese and sauce at 51. 8f. In an ice bath bus pan inside an inoperable cooler. All food discarded. Priority violation 7-38-005 see the above violation #21 for citation.

- comments: one door cooler noted not operational, unable to maintain an adequate temperature of 41f or below. Cooler noted at 86f. With tcs cheese and dairy based dressing being held in a bus pan on ice at an improper temperature of 51. 8 and 44f. Cooler tagged held for inspection and must not use until repaired, maintains a temperature of 41f and c. D. P. H contacted for re-inspection and tag removal. Priority violation 7-38-005 citation issued.
