- comments: noted a plastic bus tub repaired with duct tape. Must not use duct tape as a means of repair. Must replace.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: noted a large plastic bin of pizza sauce inside the walk-in cooler and a large metal pot used to make pizza sauce that are both too large and unable to be submerged in the three compartment sink to wash, rinse and sanitize. Must remove from the premises all oversized food containers and cooking pots that do not fit into the sink. Also must provide a written clean in place procedure for the large stand mixer. Priority foundation violation 7-38-025 citation issued.

- comments: noted a food encrusted table top can opener. Instructed to clean after each use.

- comments: must provide lids for the food waste containers inside the food prep area.

- comments: noted expanding spray foam being used as a sealant along baseboard under the three compartment sink that is uneven and unable to clean. Must smooth/cut down to be smooth and cleanable. ----dirty floor drain under the three compartment sink. Must clean and maintain.

- comments: noted a soiled mop head being stored on rear dish metal rack shelving where clean pots and pans are stored. Must properly store soiled mops at the utility service sink.

- comments: noted inoperable ventilation inside the employee washroom and also with a missing vent cover. Must repair/replace.
57. All food employees have food handler training
- comments: no proof of food handler training, certificates or proof of 'new hire' documentation on the premises for all required employees. Must provide.
