- comments: observed no certified food manager certificate posted. The premises serve tcs foods: chicken, lamb, eggs etc. Instructed the person in charge to provide and maintain post certificates visible to customers. Priority foundation violation 7-38-012. Citation issued.

- comments: observed food handler thawing frozen chicken in two compartment prep sink sitting in stagnant water. Informed the person in charge of proper thawing methods ( must utilize running water with enough volatility when thawing). Must meet proper thawing requirements and maintain

- comments: observed no metal stem thermometers for measuring the internal temperatures of hot and cold foods. Instructed the person in charge to provide metal stem thermometers for measuring hot and cold foods. Priority foundation violation 7-38-005. Citation issued.

- comments: observed multiple wet wiping cloths on prep surfaces throughout the rear prep area. Instructed the person in charge to properly store wiping cloths in a sanitizing solution between uses to prevent contamination of equipment & food and maintain.

- comments: observed multiple cutting boards with deep scratches and stains on prep stations in the rear prep area. Instructed the person in charge to resurface/replace cutting boards and maintain.

- comments: observed no chemical test kit that accurately measures the concentration in mg/l of sanitizing solution on site. Instructed the person in charge to provide a chemical test kit or other device that accurately measures the concentration in mg/l of sanitizing solutions and maintain. - comments: observed no covered trash receptacle in the employee toilet room. Instructed the person in charge to provide a covered trash receptacle in the employee toilet room and maintain.

- comments: observed multiple holes in the ceiling above the three-compartment sink in the rear warewashing area. Instructed the person in charge to seal holes and maintain in good repair.
