Report date: Oct 9, 202510. Adequate handwashing sinks properly supplied and accessible
- comments: observed no hot and cold water at the handsink between the cooks' line and the 3 compartment sink. Person in charge moved buckets blocking access to shut-off valves, turned on water supply, and provided cold and hot water at the sink. Instructed not to shut off water at handsinks. Priority violation #7-38-030(c). Citation issued.
23. Proper date marking and disposition
- comments: observed ready-to-eat, time/temperature control for safety (tcs) foods (cooked chicken and cooked noodles) not date marked to indicate the product's name and date in which the food must be sold, discarded or consumed within 7 days. Instructed to provide proper labels for date marking and discard date for refrigerated, ready-to-eat, tcs foods held over 24hrs placed in all cold-holding units. Priority foundation violation #7-38-005. Citation issued.
38. Insects, rodents, & animals not present
- comments: observed pest activity with the siting of 10 roaches during inspection. Roach activity was noted at the door to the kitchen from the lobby, on the exterior wall of the walk-in cooler, on dry storage containers on a rack, under 3 3-compartment sink. Instructed to consult pest control as additional services are needed to minimize or eliminate activity before re-inspection. Priority foundation violation #7-38-020(a). Citation issued.
57. All food employees have food handler training
- comments: noted no proof of food handlers' certificates. Instructed person in charge upon hire, food handler has 30 days to provide proof of training and maintain on site at all times.
58. Allergen training as required
- comments: observed no proof of allergen training for all certified food managers. Instructed any persons with the city of chicago food sanitation certificate to comply with completion of training and provide and maintain documentation on site
60. Previous core violation corrected
- comments: noted continued non-compliance from report #2611803 conducted on 2/05/2025. Previous core violations not corrected: (47) observed the inside of the deep fryer oil filtering unit with a build-up of grease and food debris. Instructed to clean and maintain all (49) observed accumulated grease and food debris on interior and exterior surfaces of cooking equipment and coolers. Instructed manager to clean and maintain. Must correct core violations by the date on the report. Priority foundation violation #7-42-090. Citation issued.
