- comments: observed interior of ice machine components to be heavily soiled and covered with a black and grey substance on internal components for creating and storing ice. Ice is used for human consumption. Instructed manager to clean, santitize, and maintain interior and food contact surfaces of ice machine. Priority foundation violation, 7-38-005. Citation issued.
36. Thermometers provided & accurate
- comments: observed no thermometer present in two door cooler in front bar area. Instructed manager to provide thermometer to measure internal ambient temperature.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: obsereved shelves in 2 door reach in cooler located on west side of the bar closest to main kitchen to be heavily rusted and not easily cleanable. Instructed to replace shelves with a smooth and easily cleanable surface or repair/paint.
49. Non-food/food contact surfaces clean
- comments: observed the bottom shelf of two door cooler located nearest main kitchen in the front bar to be heavily soiled and sticky from spillage. Observed microwave in kitchen prep area to have interior heavily soiled. Instructed to detail clean and maintain free of excessive spillage and build up.
53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: observed no covered trash can in the women's bathroom. Instructed manager to provide a covered trash can in women's bathroom.
55. Physical facilities installed, maintained & clean
- comments: observed mop sink in basement heavily soiled with trash and build up of spillage. Instructed manager to remove all trash and clean and maintain area.
60. Previous core violation corrected
- comments: previous core violations not corrected from 05/29/2024, report #2595368: #39) - observed ice scoops stored on top of ice bin in front bar area. Must properly store ice scoops in a clean container to prevent contamination. #55) - observed dirt and food debris on floor under cooking equipment, behind and between refrigeration units and underneth dishwashing area. Inside walk-in cooler located in the basement. Must clean and maintain. #55) observed grease and dirt build up on wall behind dishwashing area and behind cooking equipment. Must clean and maintain. Priority foundation violation: 7-42-090, citation issued.
