10. Adequate handwashing sinks properly supplied and accessible
- comments: observed handsink in basement prep area not stocked with hand soap. Informed person in charge that hand soap must be available at handsinks at all times. Food handler obtained hand soap for hand sink during time of inspection. Priority foundation violation #7-38-030(c). Citation issued.

16. Food-contact surfaces: cleaned & sanitized
- comments: noted employee washing dishes at the 3 compartment sink at bar without setting it up to wash, rinse, and sanitize as required by the code. No sanitizer was used to set up the sink. Instructed management always to set up the sink when washing equipment. Person in charge immediately had employee set up the 3 compartment sink to wash, rinse, and sanitize using the chlorine. Priority violation #7-38-025. Citation issued.

- comments: observed in basement prep area manual can opener blade encrusted in food debris, instructed to clean, and sanitize can opener blade or replace.

- comments: observed cardboard used as liner on food storage rack in basement. Instructed to remove.

- comments: observed hold colding unit that is under flat top grill external temperature display located at front inaccurate and not properly functioning. Internal ambient air thermometer inside unit was observed at proper cold-holding temperature under 41f. Instructed to repair and maintain external temperature display.

- comments: observed 3-compartment sink stoppers missing for both dish areas in basement and 1st floor sinks instructed manager must provide working stoppers at 3-compartment sinks.

- comments: observed cutting boards in the rear prep area with open seams and dark stains. Instructed to refinish or replace damaged or stained cutting boards and maintain at all times.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed water backing up at the 3 compartment sink area. When water is released from 2nd sink basin, water backs up into 1st and 3rd sink basins. Instructed manager to repair before re-inspection date. Priority foundation violation #7-38-025. Citation issued.

49. Non-food/food contact surfaces clean
- comments: observed an excessive amount of debris and ice buildup on the floor/walls/ceiling of the walk in freezer. Must remove excess ice, detail clean, and maintain.

55. Physical facilities installed, maintained & clean
- comments: observed food debris and spills on the floors and surfaces throughout the facility. Instructed to detail clean under all shelving units, interior of prep coolers, hot-holding units, prep tables and deep fryers to remove spills, food debris, dirt buildup and/or grease. Must maintain at all times.

55. Physical facilities installed, maintained & clean
- comments: observed missing and damaged floor tiles in the 1st floor prep area. Instructed to repair to create a smooth and easily cleanable surface. Must maintain at all times.
