- comments: observed the bulk dry food storage containers not label with common food name. Instructed to provide and maintain.
44. Utensils, equipment & linens: properly stored, dried, & handled
- comments: observed the serving/cooking untesils (spoons, spatulas, whisk) not inverted on the dish storage shelf. Instructed invert and maintain.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed facility uses high temperature sanitizing dish machine and the irreversible temperature measuring device provided at the time of the inspection was not registering the utensil surface temperature, during hot water sanitation. Instructed to provide an adequate irreversible measuring unit for the high temperature diswashing machine. Priority foundation violation 7-38-005, citation issued
55. Physical facilities installed, maintained & clean
- comments: observed holes in the lower walls in the basement food prep area. Holes were in the pizza prep area under handwashing sink and in dishwahsing area near the mop sink closet. Instructed to seal holes to eliminate potential harborage points for pest and maintain.
58. Allergen training as required
- comments: observed no allergen training certificate from certified food manager on site. Instructed all certified food managers must have allergen training certificate and maintain records on site.
61. Summary report displayed and visible to the public
- comments: 8-304. 11(a): observed previous inspection summary report from 03/21/2025 not posted in public view. License covered the mentioned summary report. Management was given a copy of today's inspection report summary and was instructed to post the entire summary report for public view. Priority foundation violation 7-42-010(b), citation issued
