- comments: observed improper hot holding temperatures of tcs foods in the hot holding units. Observed eggs at 120f, sausage patties at 130f and sausage gravy at 120f inside of the hot holding unit and steam table. Management instructed to maintain all hot tcs foods above 135f. Priority violation 7-38-005. Citation issued.

- comments: clean the top of the low temperature dish machine.

54. Garbage & refuse properly disposed; facilities maintained
- comments: observed an outside garbage dumpster in the garbage corral area without a lid. Management instructed that all outside garbage dumpsters must have a tight-fitting lid to contain the garbage and prevent pest conditions. Priority foundation violation 7-38-020(b). Citation issued.
