Report date: May 21, 202610. Adequate handwashing sinks properly supplied and accessible
- comments: observed no exposed handwashing sink on second and fourth floor serving/ dining area. On the second and fourth floors portable hot holding tables (2) are transported by elevator and the portable hot holding tables are pushed into service/dining areas on mentioned floors. Plates (carrots and chicken) are made and served by food handlers to consumers. Per person in charge the employees use hand sanitizer and put on gloves before serving food. Observed an handwashign sink was removed from the second floor dining area. Instructed to install a handwashing sink to allow convenient use by employees in all food preparation areas, food dispensing, and warewashing areas. The handwashing sink must meet compliance by having water from an approved source by the city of chicago, have hot and cold running water (100-120 f), and fully equipped with handwashing cleanser and hand drying provisions. 22. Proper cold holding temperatures
- comments: observed improper temperatures of raw chicken legs and thighs in a big container out at room temperature near the stove at 53. 0f-60. 0f. Instructed to season smaller batches of tcs foods to maintain cold holding temperature requirement. Must have cold holding foods at 41. 0f or below. Aprroximately 20lbs at $108 worth of product discarded. Priority 7-38-005, citation issued
38. Insects, rodents, & animals not present
- comments: observed dead roaches on the floors in the food prep/storage area. Found on floors under dishwashing equipment, shelves and freezer chest near the walk-in cooler. Instructed to remove, clean, and sanitize.
