- comments: observed broken thermometers for walk in coolers, instructed to provide and maintain to monitor equipment temperatures.
37. Food properly labeled; original container
- comments: observed bulk containers stored in rear storage room without labels. Instructed to provide for all working ingredients removed from original packaging.
38. Insects, rodents, & animals not present
- comments: observed evidence of approximately 80 large rodent droppings in the following areas throughout facility, they are as follows: in large dining room scattered along side seating on south wall in between floor and wall, in unused bar under equipment, in prep area behind freezer and rolling cart storing blenders , in dry storage scattered under wired storage carts containing rice, seasonings etc, on brick ledge located behind prep table and ice machine , under 3 compartment sink (rinse basin), in office space under desk and in corners, in basment under wired rack storing toxic materials, on stored unused equipment(sternons, speed racks,. Recommended to contact pest control for additional service prior to reinspection, remove all said rodent droppings, clean and sanitize said areas. Priority foundation violation. #7-38-020 (a). Citation issued.
39. Contamination prevented during food preparation, storage & display
- comments: observed food (rice, beans, flour) stored on floor in dry storage area. Instructed to elevate to prevent possible contamination and maintain.
55. Physical facilities installed, maintained & clean
- comments: observed basement storage area cluttered and inaccesible for adequate cleaning. Instructed to organize all kitchenware and unused equipment, remove all unnecesary items stored and elevate all items at least 6 inches off floor to prevent harboring spaces for pest. Must maintain premise.
