- comments: observed approximately 25-30 mice droppings on site. Found mice droppings in the following areas: on the floor under the shelf and the black cart in rear dry storage closet, on floor and black cart in salad prep area, and on the floors surrounding the equipment in the dishwashing area. Instructed to remove, clean, and sanitize all affected areas and maintain. Priority foundation violation 7-38-020(a), citation issued
39. Contamination prevented during food preparation, storage & display
- comments: observed an ice scoop improperly stored with the handle touching the ice, inside the ice bucket at the bar. Instructed to properly store ice scoop and maintain.
40. Personal cleanliness
- comments: observed two female food handlers in the prep area with no hair restraint. Instructed all food handlers must have on hair restraints, while in food prep area.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed digital rinse gauge on the high temperature dishwashing machine not showing final rinse temperature. An error notification displayed on digital gauge. Instructed the manager to repair, so that the warewashing machine shall indicate the temperature of the water in each wash and final rinse cycle. Priority foundation 7-38-005, citation issued
