22. Proper cold holding temperatures
- comments: observed sliced watermelon in sales area at incorrect cold holding temperature ranging between 69. 4-70. 0f packaged for sale on salesfloor. Instructed person in charge sliced melon must be maintained at 41f or below and held in cold hold unit. Corrected on site manager voluntarily discarded and denatured food valued at $20 weighing 10lbs priority violation #7-38-005. Citation issued.

38. Insects, rodents, & animals not present
- comments: observed exterior door in rear dry storage prep area with 1/4 in gap at bottom. Observed opening at base of rear exit rear exit door on sales floor. Observed opening at base of outer front entrance door. Instructed person in charge to repair and maintain tight fitting.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed three compartment sink in front prep area not label designating compartments wash-rinse-sanitize. Instructed person in charge to label and maintain.

49. Non-food/food contact surfaces clean
- comments: observed front cold hold deli cooler with food residue and grime in gaskets, on door handles, and door tracks. Instructed person in charge to clean and maintain.

51. Plumbing installed; proper backflow devices
- comments: observed water leaking from top of backflow prevention device at utility sink near front prep dishwashing area. Instructed to repair backflow prevention device at utility sink in front prep/dishwashing area and maintain. Observed leaking faucet covered with aluminum foil at one compartment sink in rear prep area. Instructed to repair leaking faucet at said one compartment sink and maintain. Observed out of order urinal in men's washroom. Instructed to repair out of order urinal in men's washroom and maintain. (note: toilet in men's washroom functioning properly. )

55. Physical facilities installed, maintained & clean
- comments: observed wall in front prep are with food debris and peeling paint. Instructed person in charge to clean and maintain smooth and easily cleanable. Observed floors, baseboards in rear prep area in need of cleaning. Instructed person in charge to clean and maintain.

- comments: observed floor near three compartment sink with voids and gouges holding water. Instructed person in charge to repair floor to be smooth and easily cleanable. Observed damaged and missing floor tiles in rear prep area with cookline. Instructed to smoothly replace or repair all damaged and missing floor tiles in rear prep with cookline for ease of cleanability.

56. Adequate ventilation & lighting; designated areas used
- comments: observed build up of grease on filters in hood system in taqueria area. Instructed person in charge to clean and maintain.
