- comments: observed no city of chicago certified food manager certificate on site while tcs foods are prepared and served. Instructed manager to ensure a city of chicago certified food manager and original certificate are on site at all times. Priority foundation violation 7-38-012 citation issued.
16. Food-contact surfaces: cleaned & sanitized
- comments: observed ice machines on the 3rd and 19th floor with a blackish pink build up on interior. Instructed manager to clean and maintain. Priority foundation violation 7-38-005 citation issued.
36. Thermometers provided & accurate
- comments: observed no metal stem food thermometer on site for measuring hot and cold tcs foods. Instructed manager to provide metal stem thermometer capable of measuring both hot and cold foods. Priority foundation violation 7-38-005 citation issued.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed 4 dish machines with no detergent hooked up. Bottles of detergent were empty. Warewash solution shall contain detergent or soap. Manager replaced detergent at each dish machine. Priority foundation violation 7-38-025 citation issued.
55. Physical facilities installed, maintained & clean
- comments: observed interior of walk in cooler with debris build up on shelving and floor. Instructed manager to clean and maintain.
