41. Wiping cloths: properly used & stored
- comments: soiled wiping cloths must not be stored inside coolers.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: broken plastic door handle on the three door tall reach-in cooler in the rear. Must replace.

- comments: exterior grease trap located in the basement with excessive grease. Must clean and maintain.

49. Non-food/food contact surfaces clean
- comments: must not use tin foil or plastic wrap as liner for shelving on the cooks line food cart. ----exterior of all coolers noted dirty. Must clean and maintain.

51. Plumbing installed; proper backflow devices
- comments: noted a plastic drain pipe from the ceiling to the rear prep sink. Must remove. ----also noted utility service sink draining slowly. Must repair to properly drain.

52. Sewage & waste water properly disposed
- comments: noted open floor drain under the three compartment sink unable to drain waste water from the sink. Also noted waste water backing up from the cooks line floor drain onto the prep area floor when the water is being used/drained at the cooks line hand washing sink. Instructed to repair so all waste water properly drains and no backing up of any waste water. Priority violation 7-38-030(c) citation issued.

60. Previous core violation corrected
- comments: previous core violation from 5-3-23 report #2575306 not corrected. #58- 2-102. 13 inspector comments: noted certified food managers on duty with no allergen training certification. Instructed management that all food service managers are required to have the allergen training certification. Priority foundation violation 7-42-090 citation issued.
