23. Proper date marking and disposition
- comments: observed cold tcs foods (cooked black beans, cooked poblano peppers, salsa, burger sauces etc. ) stored past the 7-day maximum use by date in the prep coolers and walk-in cooler. Management instructed to date mark all tcs foods stored for more than 24 hours in the coolers and discard them or use them by the use by date. Priority violation 7-38-005. Citation issued.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed no irreversible registering temperature indicator on the premises to measure the surface temperature of utensils being washed and sanitized inside of the high temperature dish machines. Management instructed to provide. Priority foundation violation 7-38-005.

57. All food employees have food handler training
- comments: observed several food handling employees without a food handler training certificate. Management instructed that all food handling employees must show valid proof of training.

58. Allergen training as required
- comments: observed the certified food manager without a valid allergen training certificate. Management instructed that all certified food managers must show valid proof of allergen training.
