- comments: observed improper cold holding temperatures of (tcs foods) inside of the 2 door cooler in the kitchen prep area. Observed cooked carnitas at 50. 1f. Management voluntarily discarded approximately 10#'s of food worth $100. 00. Instructed management to monitor and maintain all cold (tcs foods) at 41f or colder at all times. Priority violation 7-38-005,citation issued.

25. Consumer advisory provided for raw/undercooked food
- comments: observed in-complete consumer advisory disclosure statements written on the menus. Instructed management to disclose which foods can be ordered "raw" or under cooked and link those foods with an asterisk (*) to a reminder statement that states that eating raw or under cooked foods can increase your risk of food borne illness. Priority foundation violation 7-38-005.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed stained cutting boards in the kitchen prep areas. Instructed to resurface or replace the cutting boards and maintain.

56. Adequate ventilation & lighting; designated areas used
- comments: observed burnt-out lights at kitchen exhaust hood. Instructed to replace burnt out light bulbs and maintain adequate lighting at all times.

57. All food employees have food handler training
- comments: observed 2 food handling employees with expired food handler certificates. Instructed to show proof of training for all food handling employees and maintain.
