Report date: Jan 19, 202241. Wiping cloths: properly used & stored
- comments: observed wiping cloths used to clean food surfaces sitting on counter in rear kitchen prep area. Instrcted to keep wiping cloths in the the proper container containg the proper sanitation solution at all times when not being used.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed no chemical test strips available on premises to measure the chemical concentration of the 3 compartment sink located in the rear kitchen area. Instructed to keep the appropriate test strips for the sanitation being used for the 3 comparment sink at all times. Priority foundation violation 7-38-005. Citation issued.
49. Non-food/food contact surfaces clean
- comments: must not use tin foil as a liner for shelving throughou. Shelving must be smooth cleanable surfaces.
51. Plumbing installed; proper backflow devices
- comments: observed leaking pipe underneath the handsink in the women's washroom. Instructed to fix leaking pipe and maintain proper plumbing throughout establishment.
57. All food employees have food handler training
- comments: observed no food handler certifications for employees in establishment. Instructed to ensure employees handling food take the proper training and recieve certificates and to keep them in the establshment at all times.

- comments: previous core violations not corrected from 7/29/2021 report#2523360 violation #53 observed no lid on trash can in women's bathroom. Must provide. Violation# 58 observed no allergen training certificates on site. Must provide allergen training for employees who obtain the city of chicago food sanitation certificate. Priority foundation violation 7-42-090. Citation issued.

- comments: observed no posting of signage informing patrons of full vaccination requirements for covered entities at entrance and inside premises. Must post required signage.
