- comments: observed 2 vacuum packaging machines on the premises and vacuum packaged foods (sauces, duck confit, etc. ) in the prep coolers and freezers without an approved haccp program. Management instructed to submit a haccp program which must be approved for this location before using the vacuum packaging machines. Priority foundation violation 7-38-005. Citation issued.
