- comments: observed small plates not properly stored in the food prep area in the dishware storage shelving unit. Instructed to properly invert or cover said plates and maintain to prevent possible contamination.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed the use of a high-temperature dishwashing machine with no irreversible temperature measuring devices or heat test strips. Instructed to provide and maintain. Priority foundation violation 7-38-005, citation issued.
54. Garbage & refuse properly disposed; facilities maintained
- comments: observed outside garbage dumpster overflowing with trash and boxes and lids wide open with trash above rim. Employee pushed garbage down below rim and closed lids during inspection. C. O. S. Must keep the outside garbage maintained at all times. Priority foundation 7-38-020(b), no citation was issued to the manager on-site putting trash into their second dumpster unit.
