Report date: Feb 5, 20256. Proper eating, tasting, drinking, or tobacco use
- comments: observed a food handler drinking out of an open glass jar above meat in the food prep area. Instructed to ensure food handlers drink in designated areas and refrain from doing so over food items.
8. Hands clean & properly washed
- comments: observed a food handler rinse hands with gloves, wipe cooking equipment and then prepare food items. Instructed to properly wash bare hands with soap and use a hand drying provision and then put on new gloves before preparing food, refrain from washing hands with gloves.
16. Food-contact surfaces: cleaned & sanitized
- comments: observed employee improperly washing dishes at the warewashing sinks without setting having sanitizer compartment set up as required by the code. Instructed manager always set up the sink when washing equipment. Manager immediately had employee properly set up the warewashing sink, to wash rinse and sanitize using chlorine. Priority violation 7-38-005, no citation issued.
38. Insects, rodents, & animals not present
- comments: observed approximately 80 or more rat droppings on site. The rat droppings were observed on the floors in the following areas: near the handwashing sink in the prep area, under the shelf next to the three door cold holding unit in the food prep area, under the warewashing sink, cooking equipment, corner of the stand-alone freezer, under the shelf with the boxes of hinges containers outside of the food prep area, surrounding the table and three door cooler outside the food prep area, in the dry storage areas outside of the food prep area, in the dining area, and inside the furnace closet in the dining area, and under the chairs in the seating area near the front entrance. The surfaces the rat droppings were observed on were the lid to a dry ingredient storage container and on the shelf under the food prep table in the prep area and in the dry storage closet. Instructed to eliminate rat droppings, clean and sanitize affected areas and recommended contacting pest control for a service. Priority foundation violation 7-38-020(a), no citation issued
40. Personal cleanliness
- comments: observed one food handler with no hair restraint in the dishwashing/ food prep area. Instructed to provide all employees must wear hair restraints while in food prep area.
49. Non-food/food contact surfaces clean
- comments: observed the bottom surface of the interior of the three door cooler in the prep area with dried liquid. Instructed to clean and maintain.
50. Hot & cold water available; adequate pressure
- comments: observed the handwashing sink and the warewashing sinks in the food prep area hot water under pressure. Instructed manager that adequate water pressure shall be provided to all fixtures, equipment, and nonfood equipment that are requried to use water. Priority violation 7-38-030(c), no citation issued.

- comments: observed damaged floor tiles under the cooking equipment and the warewashing sinks in the food prep area. Instructed to repair and make floors smooth and easily cleanable.
