- comments: observed food stored in containers in all the coolers, walk in cooler and dry storage without proper labeling of name. Instructed to person in charge to provide a label reflecting the food item's name when food has been remove from its original packaging.
43. In-use utensils: properly stored
- comments: observed scoops for dry storage containers being stored directly inside of the container. Instructed to properly store all utensils between use.
55. Physical facilities installed, maintained & clean
- comments: observed mop in a position that does not allow to dry properly and prevent pest harborage. Must store mop after use in a mounted position that allows for air-drying without soiling and pest harboraging.
56. Adequate ventilation & lighting; designated areas used
- comments: observed the ventilation hood and filters above the cooking equipment in need of cleaning. Instructed to detail clean and maintain at all times.
57. All food employees have food handler training
- comments: observed expired food handler certificates. Instructed to update and maintain records at all times.
60. Previous core violation corrected
- comments: observed previous core violations from report #2600863 dated 08/28/2024 not corrected. They are as follows: #39. Observed pots of food being stored on the floor underneath storage shelves in the walk-in cooler in the rear. Instructed the person in charge to elevate all food items six inches from the floor on raised shelving units and maintain them. 49. Observed grease buildup and food debris on the surfaces of all cooking equipment in the rear prep area. Instructed the person in charge to detail clean and maintain. 55. Observed grease buildup, food debris, and dirt on floor under cooking equipment, along walls, and in all corners in prep, dish washing, and storage areas. Instructed the person in charge to clean floors under all equipment, along walls, and in all corners in all areas and maintain them. Instructed to correct. Priority foundation violation. #7-42-090. Citation issued.
