- comments: noted internal temperature of the following tcs food items inside refrigeration unit to be improper: tofu 50. 8f, curry soup 55. 8f, chumei soup 50. 4f, beef 50. 1f, dumpling 47. 8f. Manager immediately and voluntarily disposed of 51 lbs of products worth $400. 00 through denaturing process. Priority violation #7-38-005. Citation issued. Consolidated with the above violation

- comments: 3-501. 17 noted tcs food items prepared on site and held for more than 24 hours but no more than 7 days inside the 2-door refrigeration unit. Instructed to properly label all ready-to-eat food items with product name and used by date. Priority foundation #7-38-005(a). Citation issued today.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: equipment not maintaining proper temperature. Noted the temperature of the refrigeration unit at the prep area to be improper at 54. 6f. Instructed not to use equipment until maintaining proper temperature of 41f and below. Priority violation 7-38-005. Citation issued.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: noted water sipping from the partition of one compartment sink into another compartment, making it impossible for the sink to be set up to wash, rinse and sanitize equipment. Instructed to repair and maintain. Priority foundation violation #7-38-025. Citation issued.

- comments: noted peeling paint on walls at the basement dry storage area. Instructed to clean, repaint with non-toxic paint and maintain.
