- comments: observed no verifiable employee health policy on site at the time of inspection. Left template and instructed to maintain copies of health policy signed by all employees on site at all times. Priority foundation violation 7-38-010. Citation issued.

10. Adequate handwashing sinks properly supplied and accessible
- comments: observed no handwashing sink installed in empanada prep area. Instructed to install handwashing sink capable of delivering hot and cold running water under pressure and fully supplied with all necessary items. Priority foundation violation 7-38-030(c). Citation issued.

- comments: observed handwashing sink in bar rendered inaccessible by a plate and bottles stored inside. Instructed to maintain all handwashing sinks in an open and accessible manner. Priority foundation violation 7-38-030(c). Citation combined with the above violation.

- comments: observed the following tcs items inside the prep cooler in the kitchen at the stated improper temperatures: chicken at 55. 4f, beef at 56. 5f, sausage at 59. 1f, and cooked rice at 56. 3f. Management voluntarily discarded approximately 20 lbs of product valued at approximately $200. Instructed to maintain all tcs items at or below 41f at all times. Priority violation 7-38-005. Citation issued.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed prep cooler in rear food prep area containing tcs items such as chicken maintaining an improper ambient temperature of 55. 7f. Cooler tagged and held for inspection. Instructed to replace or repair cooler and maintain all coolers at or below 41f at all times. Priority violation 7-38-005. Citation issued.

- comments: observed no thermometer inside prep cooler located in rear prep area. Instructed to provide.

- comments: observed torn gasket on interior of door of prep cooler located in rear prep area. Instructed to repair or replace and maintain in good condition.
