8. Hands clean & properly washed
- comments: observed food employee wash hands in 3-compartment sink with no soap. Instructed manager to ensure employees wash hands only at designated hand washing sinks and use soap. Priority violation 7-38-010 citation issued.

16. Food-contact surfaces: cleaned & sanitized
- comments: observed food employee wipe food thermometer on dry towel and not sanitize thermometer between uses. A thermometer was used to take the temperature of the chicken that was not finished cooking in the dryer and then again to take the temperature of the finished product. Instructed manager to ensure food thermometers are sanitized in between uses. Chicken placed back into fryer to cook. Priority violation 7-38-005 citation issued.

22. Proper cold holding temperatures
- comments: observed homemade ranch stored in small cups held at inadequate temperatures ranging from 46-53 f. Instructed manager to ensure all cold tcs foods are held at 41 f and below. The manager discarded 5 pounds of ranch ($15) priority violation 7-38-005 citation issued.
