Report date: Aug 6, 202422. Proper cold holding temperatures
- comments: observed milk held at an inadequate temperature of 52 f. Instructed manager to ensure all cold-holding food is held at 41 f and below. The manager discarded 1/2 gallon milk ( $3). A priority foundation violation 7-38-005 citation was issued.

- comments: observed cutting board with deep scratches. Instructed manager to repair and replace any cutting board with deep scratches.

- comments: observed cardboard being utilized as shelving throughout facility including in dry storage and in walk in cooler. Instructed manager to replace all cardboard shelving with a shelving that non-absorbent, smooth, and easily cleanable.

- comments: observed leak from neck of faucet of 3-compartment sink. Instructed manager to repair faucet.

- comments: observed previous core violations not corrected within specified timeframe. Report #2582200, dated september 22, 2023, instructed the facility to #39 store items in the walk-in freezer at least 6 inches off the floor, #47 to remove aluminum foil from grease trap near 3 compartment sink, and to #55 clean along floors, walls, and basins throughout facility and near dish area. Observed food stored on the floor in the walk-in freezer observed aluminum foil wrapped around grease trap near 3-compartment sink observed build-up of debris and soilage on floors and walls throughout the facility, including between equipment and near 3-compartment sink area. Instructed manager to address all previous core violations, priority foundation violation 7-42-090 citation issued.
