- comments: i observed a food-handling employee with no beard or hair restraint. Management instructed to provide both for all food handling employees and employees with beards.
49. Non-food/food contact surfaces clean
- comments: clean the storage shelves in the food prep area and walk-in cooler, bulk food storage containers, prep tables, mixer, prep coolers, steam table, steamer units, deep fryers, and convection ovens.
55. Physical facilities installed, maintained & clean
- comments: clean the walls of the food prep area and dishwashing area around the 3-compartment sink. Clean the floor in the walk-in freezer and in the walk-in cooler, and eliminate the standing water on the floor of the walk-in cooler.
56. Adequate ventilation & lighting; designated areas used
- comments: the ventilation fan in the washroom is not operational. Must repair or replace the ventilation fan in the washroom.
58. Allergen training as required
- comments: observed a certified food manager without an allergen training certificate. Management instructed that all certified food managers must show proof of training.
