- comments: observed ready-to-eat, time/temperature control for safety foods (tcs): cooked pasta and cooked chicken held for over 24 hours without discard date. Instructed facility to provide discard date for any ready-to-eat tcs foods held for over 24 hours. Priority foundation violation. 7-38-005. Citation issued.

- comments: found kimchi, the operator states it is made on-site. A retail food establishment shall obtain an approved variance from cdph before fermenting food. Kimchi was tagged and held for inspection by the chicago department of public health. Instructed operator to no longer sell or serve said food item until haccp and a variance are approved by cdph. Priority foundation violation. 7-38-005. Citation issued.

- comments: found approximately 20 rat droppings located in the dry storage area and basement. Also noted 2 roached located behind coolers across from the handwashing sink in food prep. Recommended manager to contact pest control. Pest activity must be eliminated. Priority foundation violation. 7-38-020(a). Citation issued.

- comments: found floors in all food prep areas and under all cooking equipment filled with food debris. Instructed manager to clean, sanitize, and maintain said areas.

- comments: found continued non-compliance from inspection report# 2562972 conducted on august 30,2022. The following previous core violations were not corrected: 5-204. 12 unable to locate the backflow prevention device on the ice machine. Instructed to locate or provide. 4-601. 11(c) observed the interior of the fryers with accumulated grease and food debris. Instructed to clean. Instructed operator to comply. Priority foundation violation. 7-42-090. Citation issued.
