- comments: upon arrival, observed no certified food manager on site, while open and operating. Instructed a certified food manager must be on site at all times while open and operating. Manager arrived on site at the end of the walk-through. Priority foundation violation 7-38-012, citation issued
10. Adequate handwashing sinks properly supplied and accessible
- comments: observed dishwashing area, front food prep area, and toilet room missing hand drying provisions. Instructed to provide hand drying provisions at all handwashing sinks and maintain. Person in charge went to store to purchase rolls of paper towel before the conclusion of inspection. Priority foundation 7-38-005, citation issued.
49. Non-food/food contact surfaces clean
- comments: observed the outerior of the cooking equipment and cold holding unit being used as a prep table in the front food prep area with grease build up. The sides of, the wheels, and the shelves under the cooking equipment in ned of deep cleaning. Instructed to deep clean and maintain.
55. Physical facilities installed, maintained & clean
- comments: observed the floors and walls throughout the facility in need of cleaning. The floors and walls in the toilet room, near the fryer oil recycling equipment in the rear, and in the front food prep area. Instructed to deep clean and maintain.
56. Adequate ventilation & lighting; designated areas used
- comments: observed a blown out light bulb under the ventilation hood. Instructed to replace and maintain.
60. Previous core violation corrected
- comments: observed previous core violations not corrected from 12/12/2024, report # 2609032 #37: 3-602. 11(a; b:1-4,6,7; c; d)observed no/missing labels on food items, flour, sugar, salt and condiments (hot/mild sauces) in the food prep area. Instructed to provide. #39: 3-307. 11 observed no splash guard on left side of handwashing sink in dishwashing area. Instructed to install splash guard on left side of handwashing sink dishwashing area to prevent contamination. #53: 5-501. 17 observed no trash can lid/cover in the employee washroom. Instructed to provide. #53: 6-501. 19 observed no/broken self closing door at the employee washroom. Instructed to provide. #55:6-201. 11observed build up of debris and dirt on ceiling tiles in the food prep area and noticed broken or missing ceiling tiles in the waiting/dining area. Instructed to clean/replace and maintain. #56: 6-501. 14 observed dirty hood filters in the food prep area over the fryers/grill and dirty vent filters overhead in the ceilings throughout the facility. Instructed to clean and maintain. Instructed must correct all of the above violations and maintain. Priority foundation:7-42-090, citation issued
