- comments: no city of chicago sanitation certificate on site.
2. City of chicago food service sanitation certificate
- comments: no city of chicago sanitation certificate on site or posted at the time of inspection while handling tcs food products. Ie. . . Eggs, grits, oatmeal, pork meats etc. . . Instructed manager on site to provide certificate at all times. Sanitation certificate must be posted. Certificate was given when owner/manager arrived. Priority foundation 7-38-012 citation issued
5. Procedures for responding to vomiting and diarrheal events
- comments: no vomit or diarrhea clean up kit on site at time of inspection. Manager tried to find kit but not found at this time. Instructed manager to provide kit and maintain at all times. Priority foundation 7-38-005 citation issued
16. Food-contact surfaces: cleaned & sanitized
- comments: noted employee washing dishes at the 3 compartment sink without setting it up to wash rinse and sanitize as required by the code. No sanitizer was used to set up the sink. Instructed management to always set up the sink when washing equipment. Person in charge immediately had employee set up the 3 compartment sink to wash, rinse, and sanitize using the sanitizer. Priority violation 7-38-025 citation issued.
16. Food-contact surfaces: cleaned & sanitized
- comments: observed black substance build up at ice chute on ice machine located in basement. Instructed manager to detail clean and sanitize ice machine and maintain priority foundation 7-38-005 citation issued
21. Proper hot holding temperatures
- comments: observed 2 differant pans of cooked potatoes at improper temperature. Pan 1 on hot line 113 degrees, pan 2 on prep table 95 degrees all potatoes were discarded at this time. 5 lbs $20 priority violation 7-38-005 citation issued
43. In-use utensils: properly stored
- comments: observed a pan with clean utensils for service being stored under flattop grill. Food debris from grill area are falling onto clean utensils now soiling them. Instructed to store utensils in a clean sanitized area.

- comments: rubber gaskets on reach in coolers and walk in cooler in need of detail cleaning or replacing. Instructed to correct and maintain

- comments: faucet on 3 compartment sink in need of repair. Hozzle area is leaking correct and maintain

- comments: observed 2 outside dumpsters open with garbage overflowing at the top. Instructed manager to have additional pick ups or additional dumpsters. Priority foundation 7-38-020(b) citation issued

- comments: floors throughout prep area in need of detail cleaning to remove all grease and food spills. Instructed to detail clean and maintain.
56. Adequate ventilation & lighting; designated areas used
- comments: hood vents in need of detail cleaning to remove all grease build up. Instructed to detail clean and maintain.
57. All food employees have food handler training
- comments: no food handler certificates on site at this time of inspection. Instructed manager to obtain and maintain at all times.

- comments: no allergen certificates on site at time of inspection instructed manager to provide and maintain at all times.
