- comments: observed food handlers touching ready to eat tortillas, onions, cilantro, with bare hands while preparing tacos for customer service. Informed manager there is no bare hand contact with ready to eat food. Must wear gloves, used tongs, tissue, etc. Priority 7-38-010 citation issued.
10. Adequate handwashing sinks properly supplied and accessible
- comments: observed no hot water (60. 8f) at hand washing sink in women washroom. Instructed manager to provide hot water at all hand washing sinks and maintain for proper hand washing. Priority 7-38-030(c) citation issued
16. Food-contact surfaces: cleaned & sanitized
- comments: observed low temperature dish machine not adequately sanitizing food equipment and utensils, chemical ppm 0. Instructed manager to repair and maintain sanitizing rinse at 100 ppm. Dish machine is tagged held for inspection and must not be used until reinspected by chicago department of health. Priority 7-38-025 citation issued.
38. Insects, rodents, & animals not present
- comments: observed over 100 mice droppings scattered inside fryer cabinets, on top of dish machine, on floor along walls and corners in water heater room, prep, beverage and dish washinng areas. Instructed manager to call an exterminator for service, clean and sanitize all areas. Priority foundation 7-38-020(a) citation issued.
43. In-use utensils: properly stored
- comments: observed ice scoop handle laying on ice in beverage area. Instructed manager to store ice scoop handle above ice to prevent bare hand contact.
58. Allergen training as required
- comments: observed no allergen training for certified manager on duty. All certified managers must provide valid allergen training.
