- comments: found tcs foods at improper temperature requirement during storage. Noted a bucket of yogurt at temperature of 58. 9f stored under prep shelf and a pan of cooked chicken internal temperature of 68. 9f underneath prep shelf in the kitchen. Instructed manager, tcs foods must maintain cold holding temperature of below 41. 0f and hot holding temperature of above 135. 0f. Manager discarded the said food products. Total weight 35 lbs, total value $50. 00 priority violation 7-38-005 citation issued
