- comments: observed evidence of rodent activity on the premises. Observed approximately 25 rat droppings in main prep area on the floor on the side of cooking equipment, in rear boiler room, and on floors in corners and shelves throughout attic. Management instructed to clean and remove all rodent droppings from all affected areas. Additional pest control service is needed to eliminate the pest activity. Priority foundation #7-38-020(a). Citation issued.
54. Garbage & refuse properly disposed; facilities maintained
- comments: observed excessive grease build-up on and dripping from outdoor grease container. Instructed manager to clean and maintain outside waste grease area and waste grease container. Priority foundation violation #7-38-020(b). Citation issued.
58. Allergen training as required
- comments: observed food manager with expired allergen training. Instructed any persons with the city of chicago food sanitation certificate to comply with completion of training. Must provide documentation.
60. Previous core violation corrected
- comments: observed previous core violations not corrected from inspection report #2609966 dated 01/03/2025. They are as follows: 49. Observed excessive build up of encrusted grease deposits along food- and nonfood-contact surfaces of cooking equipment (griddles, stove, surrounding stainless steel walls and supports) throughout the main cook line area. Instructed to clean food- and nonfood-contact surfaces of equipment at adequate frequency and with appropriate cleaning materials to eliminate encrusted grease deposits on cooking equipment and maintain at all times. 55. Observed floor and wall on right-hand side below dish machine in the warewashing area to be filled with sealant foam and exposed concrete, not easily-cleanable. Instructed to replace or resurface floor and wall surfaces in this area and maintain all floor and wall surfaces smooth and easily cleanable. Instructed to correct. Priority foundation violation. #7-42-090. Citation issued.
