- comments: observed no city of chicago food sanitation manager on site while tcs foods are being prepped and served such as chicken and fish. Instructed must have a city of chicago food sanitation manager on site at all times when tcs foods are being prepped/served. Instructed must post a valid city of chicago food sanitation manager certification in plain view of customers at all times. Priority foundation violation 7-38-012. Citation issued.

22. Proper cold holding temperatures
- comments: observed tcs foods at improper temperatures. Found chicken wings in a pan in the walk-in @ 70. 3f, rib tip in walk-in at 56. 4f and sausage at 50. 1f. Instructed all tcs foods must be held at 41f or less at all times. Operator voluntarily discarded denatured foods during inspection 5o pounds at $250. Priority violationi 7-38-005. Citation issued.

35. Approved thawing methods used
- comments: observed fish and chicken wings thawing in 3 compartment sink in the food prep area and in pan. Management instructed to thaw tcs foods under cold running water, in the refrigerator or in the microwave as part of a continuous cooking process.

49. Non-food/food contact surfaces clean
- comments: observed accumulated grease and food debris on interior and exterior surfaces of cooking equipment, prep tables, freezers, shelving units. Instructed manager to clean and maintain.
