Management instructed to provide a working thermometer inside of the hot holding unit. 49 - clean the grease and food debris on the sides of the hot holding cabinets, convection oven, and prep table across from the deep fryers. 55 - clean the wall behind the deep fryers and the floor under the fryers. 55 - replace the broken floor tiles in the food prep area under the deep fryers. Priority foundation violation 7-42-090. Citation issued.
