17. Proper disposition of returned, previously served, reconditioned & unsafe food
- comments: i observed two stainless steel bowls of meat fall off of a table and onto the floor. I observed a food handling employee pick up the pieces of meat that fell onto the floor, and place them back into the bowl. The food handling employee then took the meat and dropped it into a mechanical cutting device. Management was instructed to discard the unsafe food that fell onto the floor and the meat that was in the bowl that was contaminated by the unsafe meat. Priority violation 7-38-005. Citation issued.

23. Proper date marking and disposition
- comments: observed ready-to-eat tcs foods (cooked chicken) stored in the walk-in cooler for more than 24 hours without a date mark to indicate the date in which the food must be used or discarded. Management instructed to date mark all ready-to-eat tcs foods stored under refrigeration more than 24 hours. Priority foundation violation 7-38-005. Citation issued.

49. Non-food/food contact surfaces clean
- comments: clean the interior of the prep coolers, food storage containers in the walk-in cooler and dry storage area, storage shelves above the 3-compartment sink and dry storage shelves, steam table, and exterior of the rice cooker.

55. Physical facilities installed, maintained & clean
- comments: clean the floor of the food prep area.

56. Adequate ventilation & lighting; designated areas used
- comments: clean the grease buildup on the ventilation hood and filters.
