- comments: noted internal temperatures of the following time/temperature control for safety food items inside the cold hold unit to be improper: chicken and pork 48. 0f, and beef soup in large reach in cooler 46. 4 f. Priority violation #7-38-005. Citation issued.

36. Thermometers provided & accurate
- comments: noted no metal stem thermometer on site to monitor the internal food temperature of foods the facility may receive during deliveries (i. E. Packaged deli meat, hot dogs etc. ). Facility must obtain and maintain proper thermometers on site. Priority foundation violation #7-38-005.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: noted assorted food items inside freezers and refrigeration units food stored inside grocery bags. Instructed to properly store all food items inside approved food grade containers.

- comments: noted some use of milk crates and cardboard boxes for elevation at the kitchen area, dishwashing area, and dry storage area. Instructed not to use milk crates for elevation to prevent hiding places for pest. Must provide appropriate shelving for storage. All food items must also be stored 6" away from the wall.

55. Physical facilities installed, maintained & clean
- comments: observed frease around the greas trap in the basement. Instructed to clean and mainatin to prevent attracting the pest.

56. Adequate ventilation & lighting; designated areas used
- comments: observed burned out light-bulbs in two lifght fixures in 3 c sink area. Instructed to replace bulbs and maintain lighting in the unit.
