- comments: observed tcs foods held at inadequate temperatures ranging from 45f - 48f. Instructed manager to ensure all cold tcs foods are held at a temperature of 41 f and below. The manager discarded 9 pounds of pico de gallo and 8 hard-boiled eggs ($30). Priority violation 7-38-005 citation issued.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed produce cooler prep room with an ambient air temperature of 45 f. Tcs foods are stored in said room. Instructed manager to ensure room has an ambient air temperature of 41 f and below. The manager placed a work order for the cooler. Priority violation 7-38-005 citation issued.
