- comments: observed no certified city of chicago food service sanitation manager on site at the start time of inspection while time and temperature control for safety (tcs) foods are stored, handled/prepped and served. Instructed that a certified city of chicago food service sanitation manager must be on site during operating hours. Manager arrived on site at approximately 8:55am with a vaild certified food manager certificate. Priority foundation violation. 7-38-012. Citation issued.

- comments: observed no handwashing signage in the employee washrooms. Instructed to provide.
36. Thermometers provided & accurate
- comments: observed no ambient air thermometers inside the refrigerator/freezer in the employee break room area. Instructed to provide.

- comments: observed in-use utensils (knives) stored improperly on prep area surfaces. Instructed to store properly between usage.

- comments: observed no waste receptacle at handwashing sink(s) where disposable paper towels are provided. Instructed to provide.
