- comments: 4-602. 11(b-e) observed a slight brownish substance on the top part of the interior of the ice machine. Instructed to clean and sanitize.
22. Proper cold holding temperatures
- comments: 3-501. 16(a:2. &b) observed cold holding tcs foods at inadequate cold holding temperatures located in a 2 door prep cooler in the food prep area; about 10 lbs of raw beef at 57f, about 3 lbs of raw pork at 53f, about 2 lbs of raw eggs at 52f, about 1/2 lb of diced tomatoes at 52f and about 1/2 lb of guacamole at 55. 5f. Instructed to discard and denature said tcs foods and always maintain all cold-holding tcs foods at 41f or below at all times. The manager discarded said tcs foods during the inspection. Priority violation. Citation issued 7-38-005.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: 4-301. 11 observed a 2-door prep cooler with tcs foods inside at an inadequate cold holding temperature of 55f during the inspection. Instructed to repair and always maintain all refrigeration units at 41f or below at all times. Unit tagged and held for inspection and may not be used. Priority violation. Citation issued 7-38-005.
38. Insects, rodents, & animals not present
- comments: 6-501. 111 observed evidence of live insect activity on site. Observed about 80 live small flies on the walls of the food prep area, rear storage hallway, and the outside wall of the walk-in cooler. Instructed to eliminate pest activity, clean and sanitize affected areas, and recommended contacting pest control for a service. Priority foundation. Citation issued 7-38-020(a).
39. Contamination prevented during food preparation, storage & display
- comments: 3-307. 11 observed tortilla chips in baskets and the baskets stacked on one another without a barrier to prevent the bottom of the basket touching the tortilla chips. Instructed to provide a barrier between each basket and not allow the bottom of the basket to touch ready-to-eat food to avoid any possible contamination of foods.
