- High Priority - Operating with an expired Division of Hotels and Restaurants license. Observed seating restaurant establishment operating with an expired license dated October 1, 2023. At time of inspection observed 7+ food employees engaged in food and beverage preparation, while serving approximately 25 customers. **Admin Complaint**

- High Priority - Raw animal food stored over/not properly separated from ready-to-eat Observed in walk-in cooler, raw chicken stored over several gallons of milk. **Warning**

- High Priority - Roach activity present as evidenced by live roaches found. Observed approximately 6 live roaches in crevice of metal shelf, above three compartment sink at kitchen area. Shelf is used to store metal pans/trays. At time of inspection Owner provided a invoice for pest control, conducted by Pioneer Pest Control, INC on 1/27/2024. **Warning**

- High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed sausage (121F - Hot Holding) on shelf above cookline, less than 4 hours. Advised Chef reheated to 135F and above. Observed chicken soup (110F - Hot Holding) located at steamtable unit, less than 4 hours. Chef reheated chicken soup to 190F. Observed arepas (66F - Hot Holding); sautéed vegetables (84F - Hot Holding); chicken soup (94F - Hot Holding) located at kitchen prep area, less than 4 hours. Chef placed food items into reach in cooler. **Corrective Action Taken** **Warning**
