21. Proper hot holding temperatures
- comments: observed improper hot holding temperatures of (tcs foods)inside a small hot holding unit in the prep area. Observed cooked ham at 120f and cooked corned beef at 125f. Instructed management to maintain all hot (tcs foods) at 135f or hotter at all times. Management voluntarily discarded approximately 10#'s of food worth $150. 00 as stated by person-in-charge. Priority violation 7-38-005,citation issued.

25. Consumer advisory provided for raw/undercooked food
- comments: observed in-complete consumer advisory disclosure statements written on the menus. Management instructed to disclose which foods can be ordered 'raw' or under cooked and link those foods with an asterisk (*) to a reminder statement that states that eating raw or under cooked foods can increase your risk of food borne illness. Priority foundation violation 7-38-005.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed stained cutting board with deep grooves and stains. Instructed to resurface or replace the cutting board and maintain.

57. All food employees have food handler training
- comments: observed (some) expired food handler certificates. Instructed to provide and maintain current certificates for all food handlers.

58. Allergen training as required
- comments: observed the certified food manager without the allergen training certificate. Must show proof of training and maintain as required.
