- comments: observed the high temperature dish machine not operating properly and will not switch from wash to final rinse/sanitize. Management instructed to repair the machine so that it is sanitizing dishes and utensils with hot water above 180f. Priority violation 7-38-025. Citation issued.
22. Proper cold holding temperatures
- comments: observed improper cold holding temperatures of tcs foods inside of the prep cooler and thawing in the food prep area. Observed fish at 45f, cheese at 50f, ham at 46f, cut tomatoes at 64f, steak at 46f, hamburgers at 48f, and octopus at 46f inside of the 4 drawer prep cooler across from the grill. Also observed fish at 64f thawing in cold water in the 2 compartment prep sink. Management instructed to maintain all cold foods below 41f. Priority violation 7-38-005. Citation issued.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed the 4 drawer prep cooler across from the grill with an air temperature of 47f. The cooler was used to store tcs foods such as meats and cheeses. Management instructed to repair and maintain the prep cooler below 41f. Priority violation 7-38-005. Citation issued.

- comments: repair the door handle for the 4 drawer prep cooler.

- comments: clean the top of the dish machine in the dish washing area.

- comments: repair the drain line water leak at the middle compartment of the 3 compartment sink.
