- comments: observed no handwashing signage in the men's toilet room. Instructed manager to provide signage to said sink.
22. Proper cold holding temperatures
- comments: observed various tcs foods held at inadequate temperatures ranging from 45-50 f. Instructed manager to ensure all cold tcs foods are held at 41 f and below. The manager discarded 8 pounds of made ranch, 1/8 pound coleslaw, 1/8 pound pico de gio, 1/4 pound shredded cheese, and 4 pounds of cooked potatoes. ($75) priority violation 7-38-005 citation issued.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed cooler with an inadequate ambient air temperature of 46 f. Instructed manager to ensure all cold holding units have an ambient air temperature of 41 f and below. Cooler tagged. Priority violation 7-38-005 citation issued.
38. Insects, rodents, & animals not present
- comments: observed more than 20 small flies throughout the facility, including in the basement, in the bar area, and the kitchen. Instructed manager to minimize the number of small flies in the establishment. Pest control service recommended. Priority foundation violation 7-38-020(a) citation issued.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed racks in 1st floor walk-in cooler with heavy rust accumulation. Instructed manager to replace or repaint racks and to ensure all racks are smooth and easily cleanable.
51. Plumbing installed; proper backflow devices
- comments: observed right-hand washing sink in women's toilet room not reaching proper temperature. Hot water temperature at said sink fluctuated between 70-82 f. Instructed manager to ensure both hand washing sinks in toilet room have a minimum hot water temperature of 100 f. Observed toilet unable to flush. Instructed manager to ensure all toilets are in proper working order.
54. Garbage & refuse properly disposed; facilities maintained
- comments: observed outside grease receptacle with heavy grease build up on lid and container. Instructed manager to ensure grease receptacle is clean to avoid pest harborage. Priority foundation violation 7-38-020(b) citation issued.
58. Allergen training as required
- comments: observed certified food manager on site with expired food allergen training. Instructed manager to comply with requirements.
